A few years ago, I experienced the amazing food and wine of Spain on a trip to Barcelona, Rupit, Girona and Sitges. While I have tried many tapas restaurants here at home, none have captured the tastes and flavors that I experienced in Spain. A recent trip to Toro in New York City changed that. I was worried that there would not be many vegan options, but there were plenty. The Pan Con Tomate was a perfect start. The first bite activated my taste memories, and I knew the rest of the meal would be one to remember. (Yes- I still avoid gluten, but this was worth it!) Try the vegetable paella, shishito peppers, brussels sprouts, and smoked eggplant.
